Meal Monday

I cook dinner almost every night. I won't take credit for the recipes I use, because frankly I'm just not creative enough. But the physical act of cooking takes this load of stress off and seriously is cheaper and healthier than eating out, by far.

The stroganoff tonight was asked for by my boyfriend. Delicious!

Meatball Stroganoff

Ingredients

MEATBALLS

6 1/2 oz ground beef
8 oz Italian sausage
1 tbsp onion, chopped finely
1 clove garlic, minced
2 tbsp bread crumbs
2 tbsp grated Parmesan cheese
1/4 cup egg substitute
2 tbsp all-purpose flour
2 1/2 tbsp olive oil

PASTA & SAUCE

12 oz egg noodles
4 oz mushrooms, sliced
2 cups beef broth
1 cup 1% milk
3 tbsp unsalted butter
3 tbsp all-purpose flour

Directions

1. In a bowl combine all the ingredients for the meatballs, except for the olive oil and flour. Mush together with your hands. Make golf ball sized balls out of the meat mixture and coat in the flour.

2. Put the olive oil in a skillet over high heat. Place the meatballs in the skillet and cook for one minute. Cook for a minute on each side.

3. Remove the meatballs from the skillet and place them in a baking dish. Bake at 375 for 25 minutes.

4. While the meatballs are baking, wipe the skillet out. Melt the butter and saute the mushrooms for several minutes. When they are nice and brown add the 3 tbsp of flour into the skillet and make sure to coat the mushrooms with flour. Pour in the milk and broth and cook until thick, stirring continuously.

5. Follow the directions on the noodle package to cook the egg noodles.

6. Serve the meatballs and sauce over the noodles.
